Cucumber Salad




I Love cucumber salads! They are so refreshing. Here are a couple different ones I like to make.
The best thing is that these recipes are very flexible- add more or less to your taste! I especially like the yogurt salad on a hot summer day!

Cucumber Yogurt Salad
1/4 thinly sliced red onion*
2 tbs fresh dill chopped
2 tbs chopped mint
1/2 cup Greek yogurt
1 clove garlic- crushed or a little more to taste
salt and pepper to taste
3-4 medium Cucumbers sliced thinly

Mix the first 6 ingredients and add cucumbers mixing to coat. Serve chilled.

* if you don't like the stronger taste of onions- slice then place in a bowl and sprinkle with salt. Mix them up-squeezing the juice out a little and let sit while you gather the rest of the ingredients. When you are ready for them remove from  squeeze them out a little more and add to the salad.

Pickled Cucumber Salad
1/4 c vinegar (Apple cider or even white work well)
1 tbs lemon juice (or a little more to taste)
2 tbs sugar
1 tsp salt
1/8 to 1/4 tsp pepper (to taste)
1/4 thinly sliced red onion*
3-4 medium Cucumbers sliced thinly


 Mix the first 5 ingredients well in a bowl. Add the onion and cucumbers so that they get well coated. Refrigerate to chill. Overnight is better.

Tomato Cucumber Salad (Although I have been making variations of this salad for years- this particular recipe is borrowed from "The Blond Cook" blog)
    For the salad:
Approximately 3 cups peeled & sliced cucumbers
3 Roma tomatoes, sliced into chunks
1/3 cup chopped red onion
1/4 cup chopped fresh basil

          For the dressing:
1/4 cup extra virgin olive oil
3/4 cup apple cider vinegar
1/2 tablespoon red wine vinegar
1/2 teaspoon dill weed
1 teaspoon sugar
Salt & pepper, to taste

Instructions
  1. Place salad ingredients in large bowl and toss.
  2. Mix dressing ingredients in small bowl; stir to combine well & drizzle over salad.
*I usually add a little chopped cilantro.
